Heat more olive oil than you think you ought to, enough to make a significant puddle, in a small heavy skillet, to very hot, but short of smoking.
Add a very large turnip and at least half the volume of chopped onion or onion and garlic, cut into dice of about a centimeter. Cook until tender: add herbs and pepper to taste (in my case, oregano and savory). Cook until somewhat browned.
Add an equal quantity of cooked spinach and also an amount of cheese (I used an ounce of pepper jack to a total volume of probably 750 ml of vegies). Stir while this heats and melts. Now it is food.
Variation: just before the cheese is one with the vegies, make a hole in the middle, crack an egg into it, turn down the heat to just very low, cover it, and let it sit until you think the egg is how you like it.
With less spinach you could make it more crunchy like home fried potatoes. But I wanted to eat spinach.
